VEGAN SATAY CAULIFLOWER

This vegan satay cauliflower recipe uses our Golden Chocolate Chai blend. YES! You heard right, chocolate cauliflower, but trust us this works so well! The full flavoured spices that we use in the chai blend create a lovely warmth to the dish whilst the cacao adds both the creaminess and bitterness needed.

Also this dish can be served raw or cooked, our personal preference is to lightly roast the satay cauliflower but only for around 15 mins so its warmed through and slightly softened but still holds a bit of a crunch. Why not try putting it on skewers on the bbq?

Here we have served it with a mixed salad but this dish could also be served rice or noodles.

Ingredients:

1 whole cauliflower

50ml Olive oil

2 tbls peanut butter

1 tbls of white wine vinegar

1 1/2 tbls Golden Chocolate chai blend

1/2 fresh lime

1 pinch of chilli flakes (or more if you like it hot hot!)

1 pinch of chilli powder

1 can of chickpeas

Generous covering of mixed seeds

Method:

Cut the cauliflower in to florets

Put the olive oil and peanut butter in a bowl and melt until runny.

Add all other ingredients apart from the seeds.

Add the mixture to the cauliflower and chickpeas and get your hands stuck in to cover the florets.

Spread it out evenly on a baking tray and generously cover with mixed seeds.

Eat raw or roasted, we like to roast it on gas mark 6 for around 15 mins just to warm and soften.
